Dixie Diners’ Club Yellow Cake & Cream Cheese Frosting… Just 5 Carbs a Square!

I whipped this up last night in less than 15 minutes!  In addition to the mix (buy it Monday with the coupon – see below), you just need 4 large, extra large or jumbo eggs, 1/4 cup sour cream, 1/4 cup softened butter and 2/3 cup water.  It bakes in 20 minutes!

I changed up the frosting from the Butter Cream listed on the package. We love Cream Cheese Frosting so I substituted 1/4 stick of unsalted butter with 4 tablespoons of cream cheese. The end result reminded me of the classic Cream Cheese Frosting of  my teenage years when my friend, Kathy, and I enjoyed leftover icing her mom made for cupcakes.

So, if you want the fabulous low carb version of the Cream Cheese Classic, follow these directions. In small mixing bowl or food processor, combine 1/4 stick of unsalted butter, 4 tablespoons of cream cheese (regular or low fat), and contents of bag #2. Mix until creamy.

    I just want to thank everyone who had anything to do with this site. My 3 year old GreatGrandson was diagnosed with Type 1 Diabetes in July. It has been life changing for all of us. It seems anything he likes is so high in carbs. That is the hard part, just trying to figure out a whole meal without overloading the carbs. This is an answer to our prayers. Thank you

      Thank you for this beautiful, heartwarming, and encouraging message for all of us. Isn’t it just wonderful that a child with Type I Diabetes can enjoy a piece of cake on his birthday without worrying about a spike in his blood sugar! He can now know normalcy, enjoying low carb cakes, cookies, muffins and other snacks and goodies. I am sure he is much happier now that he has more options – and options that taste great!
