Love It 2 Times! Garlic Green Beans – Side Dish and Soup

Garlic Green Beans has been a favorite dish of the family for 25 years! I usually make it as a side dish, and always make more than I need so we can enjoy leftovers the next day as soup.  When using as a soup, I like to add a low carb bread like Pepperidge Farms 5g carb bread or I spread low-fat cream cheese on a couple Bran Crispbreads.

When I was thinking about the twofold use of the green beans, Jim Morrison’s Love Me Two Times entered my mind.  It just so happens that the title of his song fits the dual nature of the dishes perfectly!  (I think Shrinking Man resembled Morrison almost 40 years ago). Garlic Green Beans:  Per Serving:  116 calories, 3 carbs
Serves 8

2 teaspoons fresh garlic, minced
2 lbs. of fresh or frozen string beans
10 oz container of mushrooms, sliced
4 Tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon salt
2 containers Emeril’s Organic Veg Stock
2 tablespoons fresh lemon juice

Heat the oil in a large heavy saucepan. Add garlic and beans.  Sauté for about 5 minutes over medium high heat; stir frequently so they don’t burn.  Add both containers of vegetable stock, thyme, and salt.  Bring to a boil, cover, and reduce heat.  Simmer for 10 minutes.  Add mushrooms and continue to simmer for another 10 minutes or more until beans are tender. Frozen beans take about half the time.  Add lemon juice, toss and serve.
