Life DID get easier!  I used to make this recipe for my family and friends the “old way” with caramelized almonds, which meant using 2 tablespoons of sugar and then an additional 4 tablespoons of sugar for the dressing!  No Way am I eating that salad anymore – ever!  What do you think 6 tablespoons of sugar gives you in calories and carbs?  6 Tablespoons of sugar = 288 calories and 72 carbswiki.answers.com

Last evening, I made this salad for a gathering of 10.  I am happy to say that everyone ate their salads – even the picky males – young and old!  This is a winner!

Mandarin Orange & Honey Almond Salad (serves 10) Just 5 carbs per serving and 161 calories on the Phase I Program.

Dressing: Combine and shake in a jar.
1 tsp salt
¼ teaspoon pepper
¼ cup or 4 Tablespoons Stevia Extract IN THE RAW(Cup for CUP) or Splenda
4 TB cider vinegar
1/2 cup salad oil (I use canola)
Few dashes red-hot pepper sauce
2 TB chopped fresh parsley
Refrigerate leftover dressing.

Salad Ingredients:

2 and ½ to 3 lbs of romaine lettuce, chopped
5-6 celery stalks
1 bunch of green onions including the tops, thinly sliced (I use the whole scallion)
1 bag of Sunkist Almond Accents – Honey Roasted
1 cup (single serving) Del Monte – Mandarin Oranges (No Sugar Added)

Tear lettuce and romaine into bite size pieces (about 4 cups). Mix together with the celery and scallions. 5 minutes before serving, add the single serving container of mandarin orange segments and almonds. Toss with the salad dressing.

    I have been wanting to make this salad for the longest time, but it was to involved. But this looks like nothing to make. I am going to make this , this weekend when I have Georgeana’s birthday dinner. Can’t wait!

      Simple, uncomplicated and healthier! It’s so much easier! Can’t wait to tackle some more high carb favorites and slim them down.

    omg, I cannot believe this website popped up on Facebook, Thank you soooo much. I have not been eating carbs for a year and have lost 50 lbs. But I have the winter duldrums and was about to give up, you have renewed me. I am ready to begin again, have 30 to 50 more to go, I need support. Thank you, thank you.
