“Low Carbing It” at the Office Today – the CarbLightLiving Way!

Consider making extra portions of your main evening meal to enjoy the next day.  Pack them up and store them in the fridge, if needed. This practice will make life easier as you simply grab and go the next day! That’s what we did this afternoon.   Shrinking Man, his Director of Marketing, Leslee Ent, and I enjoyed a low carb and truly delightful lunch of leftovers!

Leslee brought in leftover turkey soup (Leslee promises to send the recipe) and I added Eggplant Parmesan and Dixie Diner’s delicious Low Carb Molten Chocolate Royale Cake.
Click here for my hearty Italian Eggplant Parmesan! I made 7 1/2 pounds last night!  I ate it for dinner last night, lunch today and dinner again tonight – it was that good!

We love Skinny Water too as a change from water.  My favorite is Sport Pink Berry Citrus
