Holiday Salad with Vanilla Vinaigrette – Just 4 Carbs!

This is my version of a similar but much higher carb salad which is served in a local restaurant and uses pistachios and cranberries.  I substituted pecans for the pistachios and red onions for the cranberries.  I kept the shredded cheddar and a small amount of granny smith apple slices.

Holiday Salad with Vanilla Vinaigrette:  serves 3 with just 4 net carbs and 349 calories

 
Dressing Ingredients:

3 tablespoons cider vinegar
½ teaspoon Truvia, Stevia or Splenda
1 teaspoon vanilla flavoring
½ teaspoon salt
¼ teaspoon pepper
¼ cup canola or vegetable oil

Mix together all dressing ingredients except oil.  Add oil and mix again.  I use a small food processor which helps to incorporate the oil; however, you can also whisk the dressing by hand.

Salad Ingredients:   Divide into 3 dishes

9 cups of Spring Mix salad greens
3/4 cups grated low-fat sharp cheddar
3 Tablespoons chopped pecans – roasted for extra flavor
½  granny smith apple, sliced very thin
Red onion slices or shredded red cabbage

My daughter arranged the salad ingredients three different ways, as you can see from the photo.  The first time I made this salad, I mixed everything together.  Although it tasted fabulous, the salad was not visually enticing, so it’s best to let the individual ingredients stand out.
