Carb Light Living™ Banana Almond French Toast – just 17.2 carbs for 2 pieces!

Ingredients:

  • 4 extra large or jumbo eggs
  • 3 Tbsp. light cream
  • 1 large banana, cut into chunks
  • 1/2 tsp. pure Almond extract
  • 8 slices Arnold Bakery Light 100% Whole Wheat bread or Trader Joe’s Light Whole Wheat Bread

Directions:

  • Spray a griddle or skillet with cooking spray
  • In a blender or Vitamix, add the eggs, light cream, almond extract and banana chunks; Blend until smooth
  • Dip the bread slices coating both sides. (You can double dip but don’t leave in batter too long or the slices will break apart since the bread is soft, not dense)
  • Transfer bread slices to hot griddle or skillet, being carful not to leave on too long as they brown quickly. Turn and brown the other side
  • Serve the French Toast hot with butter and syrup (neither calculated in recipe)
  • Enjoy!
  • Note: I found Vermont Sugar Free Low Calorie Syrup to be the lowest in carbs. You can find it in the CarbLightLiving Store: http://astore.amazon.com/carblightlivi-20. Note that just 1/4 cup of this low carb syrup is 5 carbs, so use sparingly! If you don’t care about syrup, skip it! For a unique low-carb topping, mix 1 Tbsp. of sugar- free jam with 1 and 1/2 Tbsp. of water and microwave for 30 seconds.
